If you throw boiling water into the air in Antarctica, it vaporizes immediately. WHY?

The boiling water raises the temperature of the surrounding quite a bit, but the relative humidity is still very low, so the air would quickly absorb the water. However, because the air in Antarctica is so cold; shortly after the boiling water evaporates, it will condense and form small clouds that will quickly dissapate
